Who makes Rebel Kitchen coconut water?

Rebel Kitchen buys its coconut water straight from smallholders in the Philippines and has it bottled on site. No middleman shipping the coconuts out of the country to be reduced somewhere else. The young green Laguna Tall coconuts are picked by hand and the water is in the bottle within a day.

We did not pick this brand because it is the cheapest, but because it is raw. Never heated.

Almost everything on a shelf is pasteurised, and much of it is made back up from concentrate as well. This coconut water is kept under high pressure instead of heat, which is why it has to stay chilled.

We know of one other brand selling raw coconut water: Upfront. We say so, because a page pretending there is no alternative is not telling you what you need in order to choose.

Open a fresh young coconut yourself and you have something better. Short of a coconut and a knife, this is as close as it comes in a bottle.

How does raw coconut water taste, and why is it different?

This water is not pasteurised. Instead of heating it, it is put under high pressure, which extends its life without boiling the taste flat. Heated coconut water tastes sweeter and flatter; this tastes sharper and closer to the coconut.

That is why it has to stay cold, and why we cannot sell it until it can reach you chilled.

Why does coconut water turn pink?

Coconut water from young coconuts turns pink over time. That is a reaction of the antioxidants naturally in it, not spoilage and not a colouring.

Most coconut water never turns pink at all, and not because somebody corrected the colour. Heating it, or reducing it to a concentrate and making it back up, destroys the enzyme the reaction needs. What is left is a drink that stays the same shade because there is nothing in it left to react.

Here that enzyme is still there, so every bottle looks a little different.

How is coconut water made?

Young green coconuts are picked by hand on smallholder farms in the Philippines, where the Laguna Tall is grown. The coconut is opened, the water drawn off, and it is bottled on site.

What does not happen matters as much: the water is not reduced to a concentrate and made back up somewhere else later. That saves shipping weight and costs taste, and it is why most coconut water on a shelf comes from concentrate.

Does coconut water have electrolytes?

It contains them naturally, potassium among them: 220 mg per 100 ml, which is 11 percent of the daily reference intake in a glass. **Potassium contributes to normal muscle function**, and that is an authorised health claim because it has been demonstrated. Because nothing is added or taken out, it is in there as it was in the coconut.

What it is not is a sports drink. Alongside potassium, what you mostly lose in sweat is sodium, and there is little of that in coconut water. For an hour on a bike or after a session this works well. For two hours in the heat you need salt with it.

How long does coconut water last, and how do you know it has gone bad?

Unopened and chilled, until the date on the bottle. Once open: two to three days, in the fridge.

Coconut water that has gone off smells wrong before it tastes wrong: it turns sour and starts to fizz slightly. The pink colour is not a sign of spoilage, which is a different question with its own answer above.
