Blackberries
Dark, sharp and full of seed. The same family as the raspberry, with more pigment and more fibre.
How to use it
Raw, as fruit. Through yoghurt, or frozen into a smoothie.
The best version
Matt black and firm. Shiny and hard means it was picked early and will stay sour; a ripe blackberry lets go on its own.
How to prepare it
Wash them as late as you can. If you do not want the seeds, sieve them out after warming them briefly, and the fibre goes through the sieve with them.
What it does
Blackberries have barely been studied in people as a food on their own. They are here for the fibre and for the same dark pigments that were measured at the blood vessel with the blueberry.
Watch out
Blackberries beside a road or a field edge sit in the exhaust and the spray. Pick them well away from traffic, and rinse them.
